Sometimes people ask you strange questions, like what beer defines your brewery? Or what beer best tells your story?

I originally found that idea pretty strange, until we released West Coast IPA, a tribute to the classic US west coast style. To me this beer defined what we are about. Its’ balance, the resin, the heavy pine and then giving way to the citrus flavours imparted by the US and NZ hops. The malt body is full, but not heavy and the alcohol at a perfect level for the bitterness.

We name our beers after locations from our travels. Our beer names so far are predominately from the US west coast, so why did we name this beer after the entire region? It’s that special to us. This recipe’s simplicity and focus says everything about us.

So why would I be writing about stopping to produce the beer I love so much?

Continual Improvement.

West Coast relies on fresh hops, all good beer does. The beer is at it’s best when the new year harvest is available. So why would we make it all year round? Do we compromise quality by having it available all year? Maybe not. We make plenty of other beers all year round. But if this beer defines us, don’t we have a responsibility to make it bloody special?

Personally it’s a difficult call to not have this beer around all year. It’s my number one beer to have in my home fridge. It’s the beer I crave after a long day or when catching up with mates.

But you know what’s going to make up for not having it around all the time? When we re-release West Coast it will be the best version you’ve ever tasted. It will be fresh AF. I expect to have a cheeky nostalgic grin as soon as I sip it and plan to stock my home fridge to the brim.

And it will be the beer that defines us again, the beer that hand on heart, is the best it can be.
